Spice your day – Tom Kha

Here is an easy recipe for an Asian coconut milk soup called Tom Kha. It is just the right thing in the winter, it warms you up like nothing else.

For 2 persons you need:
240 ml water
240 ml coconut milk
120 g chicken fillet
60 g champignones
20 g leek
50 g paprika
70 g carrot
20 g tom kha paste (or powder)

Put the water, coconut milk and tom kha paste into a pot, mix and bring it to a boil. For extra seasoning you can add in the same time a straw of lemon grass (3rd picture) that is tied into a piece of cloth, to remove easily later.

Cut the paprika, carrots and leeks into stripes and sautee them for a little in a pan. First the carrots and paprika and a little bit later also add the leeks.

Cut the mushrooms and chicken fillet into pieces. Add all the ingredients into the slowly boiling mixture and let it boil for 5 minutes. If you want you can make extra seasoning with fish sauce and lemon juice. Enjoy!
